This wine is made in a monastery by the Norbertine nuns. This special wine, In Valle Mons, was created to celebrate the 750th anniversary of the Sint-Catharinadal monastery in Oosterhout. Blanc de Blanc Brut is not just a celebratory wine, it is an ode to centuries of dedication, silence, work, and faith, captured in a stylish bottle. In Valle Mons, a sparkling Brut is made according to the tradition of great sparkling wines. The name, Latin for “In the valley of the mountain”, refers to the spiritual origins of the monastery and the place where this wine comes to life.

Character and aromas

This sparkling wine is made using the Champenois method. The aroma reveals notes of yellow and tropical fruits, vanilla, toast, apricot, and ripe yellow apple.

The wines of Sint-Catharinadal are the result of a unique collaboration between the Norbertine Sisters, a dedicated group of volunteers, and a professional winemaking team. Together, they form a unique community where tradition, craftsmanship, and modern viticulture converge. The sisters actively participate in the vineyard and winemaking process, driven by their conviction that labor and care for creation are essential elements of their monastic life.
