Wild White – Vineyard Dassemus

This Wild White wine from Wijngaard Dassemus in Chaam (North Brabant) is fresh, lively and exactly the kind of wine you want to open when you feel the sun on your face. What makes this wine so special? It is pure, honest and processed in a completely natural way.

This natural wine is made from Solaris, Sauvignac and Johanniter. The grapes are picked by hand and undergo spontaneous fermentation with wild yeasts from the vineyard. No additives are used during vinification and the wine is bottled unfiltered.

The scent beautifully reflects green apple, pineapple and pear.
It is a reductive wine, which gives this wine a sulfuric smell.
You can solve this by airing the wine properly.

This wine is dry and slightly mineral, with a fine tingling on the tongue. The aftertaste has a tough bitterness, which gives the wine extra character.

About the winemaker

Dassemus Vineyard is located near Chaam, in North Brabant. The first hectare was planted in 2005 with the help of friends and family of the founders: Ron Langeveld and Monique van der Goes.
Dassemus is a fully organic and biodynamic Dutch winery. This means no pesticides or artificial fertilizers are used. Fertilization is achieved with composted plant and organic waste, along with manure from their own goats and chickens. Weeding is done mechanically instead of pesticides. Nitrogen is added to the soil by mowing green manure. Dassemus has been Demeter-certified since 2021, making it the first biodynamic vineyard in the Netherlands. The company produces ciders, biodynamic wines, and natural wines.
