About the wine

The Domein Holset – Novo Extra Brut is a high-quality sparkling wine from South Limburg, made using the traditional method. This sparkling wine is lively, fruity, and refined in style. It's perfect as an aperitif and with lighter dishes. The aroma reveals notes of apple, citrus, peach, and a hint of blossom. The taste is fresh and elegant, with pronounced acidity and a soft, dry finish.

The wine is made from 85% of the Souvignier Gris grape and 15% of the Johanniter grape. The grapes are sustainably grown at the Holset Estate in Lemiers, Limburg. All grapes are hand-picked, carefully selected, and pressed. This is followed by meticulous vinification. This wine is fermented and aged in stainless steel for 70%, in Burgundian oak for 20%, and in ceramic for 10%. Full malolactic fermentation and a dosage of 3 grams per liter give the wine perfect balance. The result is an elegant sparkling wine with depth, refinement, and a subtle mineral character.

About the winemaker

Domein Holset is a vibrant winery in the hilly south of Limburg, specializing in locally produced sparkling wines. Everything is managed in-house: from grape cultivation to the entire winemaking process and the application of traditional methods. They work with great care and in the most sustainable way possible. They operate organically, but without a quality mark.

At the helm is Kirsten Abels, winemaker and director of Domein Holset. In 2023, she was named Wine Woman of the Year. Her signature is evident in every bottle: a certain elegance and refinement that is characteristic of the estate. Visitors can not only sample the sparkling wines and stroll through the vineyards, but also stay overnight in one of the seven unique rooms.
