About the wine
The Brut de Mer of Wine Estate En Passant is a sparkling Dutch wine from the depths of the Oosterschelde estuary. This wine is made from the Souvignier Gris, a grape that thrives in the Dutch climate and produces wines with character. The Brut de Mer is a sparkling wine that allows for endless discovery. It is complex, with notes of ripe peach, white peach, apricot, green apple, and a light floral note. The palate is full and creamy, and the finish adds exciting layers. It transports you to Zeeland, surrounded by the sea.
Maturation in the Oosterschelde
Nestled in the briny depths of the Oosterschelde, far from the reach of light and oxygen, the bottles mature fifteen meters deep in an environment with a constant temperature and gentle sea swell. The result is a wine with a remarkably full structure, refined mousse, and a subtle, salty finish. The Brut de Mer is a wine that has literally tasted the sea. The stillness and movement of the water allow the mousse to develop elegantly and the wine to quietly find its equilibrium. The yeast is constantly in motion due to the undulating action at the bottom, enhancing the development of the flavors. This gives this sparkling wine character, finesse, and a story.
During the months-long aging process in the sea, the bottles are shaped by the water and the life that attaches to them. Barnacles, seaweed, and other marine life make the bottle visually unique, with natural packaging that tells something about the wine's origins.
About the winemaker
The winemaker, André Vink, has a very small vineyard of just 0.5 hectares next to his campsite. André is a true example of a winemaker who dedicates a great deal of time and attention to his grapes on a small scale. André works with a manual selection and professional advice from winemaker Stan Beurskens, who knows how to make excellent wines. André is influenced by classic French wines (taut, dry, elegant), but with the Zeeland terroir, salty wind, and mineral notes in his wines. André is also a pioneer with his Raw SeaTogether with Stan Beurskens, he was the first Dutch winemaker to mature his sparkling wine in the sea.
